Organists generally know two Organ Masses of François Couperin.
The Messe à l'Usage ordinaire des Paroisses, pour les Festes solemnelles (usually translated as Mass for the Parishes) is the larger of the two Masses and was intended for the principal feasts of the church year and written for a large organ, such as the one at Saint Gervais Church in Paris.
Traditional liturgical practice of the time would have had the various organ versets alternate with phrases of a chant Mass (in this case Cunctipotens genitor Deus), sung by the Schola.
This same practice can be equally effective today!
